Ray’s Maltese Tuna Sandwich

Ingredients:
– 1 French Baguette
– Yellowfin Tuna in Olive Oil
– Fresh Basil Leaves
– Tomato Paste
– Extra Virgin Olive Oil

Instructions:
1. Slice the baguette into pieces about 1โ€“1ยฝ inches thick, then split each piece horizontally to form sandwich halves.
2. Empty the Tuna into your mixing bowl and include the olive oil.
3. Empty the tuna and its olive oil into a mixing bowl. Stir until the tuna is evenly coated and slightly flaked.
4. Lightly drizzle the cut sides of each baguette slice with extra virgin olive oil.
5. Spread a thin layer of tomato paste on each slice.
6. Scoop a generous amount of tuna mixture onto half of your baguette slices.
7. Top the tuna with a few fresh basil leaves.
8. Close each sandwich with the top baguette slice and serve.
